Spicy Quinoa Recipe

Angie and I have been experimenting with a variety of quinoa recipes lately and absolutely loving it! It’s a great alternative to brown or basmati rice and oats, which are staples in my diet. One of the big benefits is that it’s gluten free, which is great for our fellow Fat Loss Quickie friends who have an intolerance or allergy to gluten.
Here are the ingredients in this recipe that Angie created recently:
1 cup Quinoa
2 cups vegetable broth
1 cup chopped onion
4 garlic cloves
2 Tsp crushed chillies
1 Tsp cumin
1 Tsp black pepper
1 Tsp red pepper flakes
1 cup frozen corn
1/2 cup cilantro
Directions:
Soak quinoa for 3-5 minutes, then rinse.
Bring quinoa, vegetable broth, crushed chillies, cumin, and black pepper to a boil. Then simmer for 30 minutes.
While the quinoa is simmering, fry up the onion and garlic in a little bit of olive oil.
After 30 minutes, add the onion-garlic mix, the corn, and cilantro to the quinoa and let simmer for 5 minutes.
That’s it… Enjoy!
Nutrition Facts: 4 servings
234 calories
44 grams of carbs
8 grams of protein
3 grams of fat.
Of course, you don’t need to add the corn and you can cook it in water instead of vegetable broth if you wish.

What are crushed chillies? At first I thought they were red pepper flakes, until I saw they were already in the recipe. Are crushed chillies found in the spice section at the store?
Yes, crushed chillies can be found in the spice section of your grocery story. We buy them in bulk because I go through them a lot. I love to sprinkle them on my eggs, pasta meatsauce, and many other meals.
They are hotter than red pepper flakes, but look very much the same in appearance.

Quinoa is fantastic! One of the few vegetarian, complete proteins.

I loved this article. It’s hard to find good consistent details about health online. It’s very difficult to sort through the different bad content and get down to the good stuff.
