Healthy Family Dinner

In today’s Fat Loss Quickie “Day In The Life” video, Angie and I share one of our favorite healthy dinners that our kids also really enjoy. The healthy dinner is homemade Shepherds Pie. I know that there are a variety of ways that you can make Shepherds Pie and today we tried something slightly different. We baked it in the slow cooker instead of the oven. Mainly because it’s so hot out and our air conditioner is already working overtime
Directions:
Cook lean ground beef in a medium a medium saucepan with finely chopped onions and garlic. (We also used ground chicken and turkey with this recipe and it’s outstanding!)
While your beef is cooking boil white potatoes. When your potatoes are soft, drain the water and mash them with skim milk and seasonings of your choice. ( we often boil our potatoes with a few garlic cloves which also get mashed). We haven’t tried this yet, but I’m sure that you could also use almond milk as a substitute for the skim milk and even add some almond butter.

Next… after your potatoes are mashed and lean beef cooked, simply place the lean ground beef in the slow cooker followed by a can of creamed corn and finally add your mashed potatoes on top.
Turn your slow cooker on high and cook for 20-30 minutes.

We rarely have any worries about our daughter Noelle. She eats just about any fruit, veggie, or meal that we put in front of her. Yesterday she at an entire bowl of raw veggies that were sitting on the dinner table before we had a chance to get the main course to the table.
Shayne is our picky eater and he does enjoy junk food
We have experimented with a variety of meals to find the ones that he does enjoy (or can put up with). We also make sure that he gets the recommended amount of fruit and veggies in his diet. There are only a few fruits and veggies that he likes so we make sure that we are always stocked up on them. Yes, this is a popular meal in my family. I sometimes make “Thanksgiving style” with sweet potato and ground turkey. I also make my mashed potato with fat free chicken broth and a little bit of fat free sour cream or skim milk. My family does insist on cheese so I use light mozzarella and sometimes split the creamed corn with 1/2 frozen or canned corn.
Awesome Marc! We love sweet potatoes, but have never made Shepherds Pie with them. Thought of it, but haven’t done it. That would be perfect with the ground turkey for sure… mmmm, I can taste it already
I always make mashed potatoes with the potato water instead of milk. Always have lots of garlic cooking in with the potatoes. Add a little butter and sea salt and with the garlic taste they seem just as rich as if you’d used milk. Plus you get some extra vitamins from the water.
Thanks for that great tip Heather. We’ll make mashed potatoes with just the water next time and let you know what we think. How much butter do you add to it? Is it just as good without the butter?
I don’t know how much butter. Depends on how many potatoes. It’s creamier with the butter since you’re just using water but I suppose you could just do it with the garlic and water. You’re asking the wrong person, because I have been known to eat butter plain if I leave it out tempting me too long and I think EVERYTHING tastes better with butter (and garlic)….

One cool recipe book to check out if you have a picky eater is called “Deceptively Delicious” by Jessica Seinfeld. (Jerry Seinfeld’s wife)…it is a bunch of recipes that your kids will enjoy, except they “sneak in” veggies. I’m a picky adult eater and was surprised at how good some of them were.
